I am a huge fan of nut butters but let’s face it, they can be expensive! Not only that, but some nut butter brands have added salt, sugars and preservatives. But if you buy your own raw nuts and spend a little time and love, you can make your own nut butters for your family! Believe it or not, nut butters are very easy to make. And in an era when more kids are restricted from taking peanut butter to school due to allergies, nut butters are a great option.
My favorite is almond butter. It contains a higher amount of essential fatty acids. Uh oh, does the word ‘fat’ freak you out a bit? Don’t worry, it’s unsaturated fat which is heart healthy. Almond butter also has the most fiber and 8 times the amount of calcium as peanut butter.
All you need is a little sense of adventure and a high powered blender. Here’s how I do it.
For the easiest method I use the BlendTec. Simply add 1/4 cup of nuts and 1/4 cup of water. Blend. Add 1 teaspoon of water and blend until you reach the consistency you desire. When you’ve reached it, add in some salt and a natural sweetener to taste.
If you don’t have a BlendTec, you can try the following recipe for Almond Butter.
- 2 Cups Almonds
- 1 Tablespoons Raw Honey or Coconut Nectar (optional)
- 1/2 teaspoons Himalayan Salt (optional)
Place almonds in food processor. Process for 8-12 minutes. You will need to scrape down the sides in the beginning. If you choose to use the honey and salt, stir in by hand after the butter is made as it will seize the mixture if you try to add it before.
Process the almonds for a total of 12 minutes. The mixture will go from crumbly, to thick, until the oils redistribute and the mixture turns smooth! Be patient with the process.
At 2 minutes the mixture will look like this:
At 6 minutes, the mixture will look like this:
At 10 minutes, the mixture will look like this:
At 12 minutes, the mixture will be smooth and ready for your honey and salt.
