Sometimes I think I’ve seen it all, and then a product like Neat comes along and I am blown away! At the Natural Products Expo East in Baltimore, I met an insanely smart young couple, who out of a need to find other vegan food options for their family, experimented and came up with an all natural, gluten free vegetarian meat replacement made out of pecans, beans and organic cornmeal. Laura Lapp, a former neuroscientist, and her husband Phil Lapp decided to stop eating meat for various health reasons. Laura developed a product using only all natural, chemical-free foods that would make a ground beef-like consistency. Their daughter, a sweet animal rights advocate, came up with their product name when she said “This isn’t meat, it’s neat!” Neat is so simple to make: you blend the Neat mix with 2 tablespoons of water and 2 eggs or an egg replacer and then brown the mixture in a pan like you would for ground beef.
