
Coconut Cream of Broccoli Soup

Serves 4
Ingredients
- 5 cups broccoli florets
- 1 medium onion, diced
- 5 stalks celery, diced
- 2 cloves garlic, diced
- 2 tablespoons butter
- 1 tablespoon coconut oil
- 3 tablespoons coconut flour
- 1 can coconut milk
- 1 cup chicken broth (swap for veggie to make vegan)
- 1 teaspoon salt
- 2 teaspoons pepper
Instructions
- Dice onion, celery and garlic and sauté with coconut oil until onions are translucent.
- Place cooked vegetables in crock pot.
- Melt the butter.
- Add coconut flour one tablespoon at a time. Stir constantly using a whisk to ensure there are no lumps. It should look like a thick paste.
- Add the coconut milk to the paste and stir frequently until thick and creamy.
- Pour the milk mixture into the crock pot.
- Add chicken broth and salt and pepper.
- Add the broccoli to the crock pot.
- Cover and cook on low for 6-8 hours.
