Summer is a great time for salads! Everything is in season and so beautiful. Try this dressing for your next cookout or summer lunch. It’s creamy and delicious.
Creamy Cado

1 Avocado
6 Tbs. Goat Cheese
1/4 Cup Extra Virgin Olive Oil
Dash Garlic Powder
Pinch Sea Salt
Dash Ground Cayenne Red Pepper
Half Fresh Lemon Juice
Serve over a salad of organic spinach and lettuce mix red peppers, cucumbers, yellow squash, cherry tomatoes, slivered almonds, sunflower seeds, pumpkin seeds! Enjoy!

I LOVE the black bean salad too! The barley salad (on the cover) is great. Everything I’ve made from the book is great. I’ve made: hmdmeaoe ketchup, ranchero sauce, miso soup, broccoli soup, tortilla soup (you MUST make the tortillas strips!), barbecued tofu chop salad, multigrain quickbread, lasagna, and choc chip cookies. I’m dying to make the rfd burgers but I think it would take 2 days!Have fun!
