Mornings are underrated. So many people dread its arrival. They hit the snooze button. They roll over as if they are in pain and pull the covers over their head. They sigh at the mile long list of things to do before they even get out of bed. What a missed opportunity to set your day up for success! Your morning routine sets the tone for the rest of your day. Most of my day is full of noise. People. Pets. Kids. Work. Soccer. Appointments. But, in the morning, my house is quiet. My brain is clear. I can just sit and breathe and enjoy a cup of tea without anyone asking me any questions or needing anything. It is glorious!
I’ve found that waking up at least 60 minutes earlier than everyone else helps me prepare for the typical morning rush. Stay off your phone. With the exception of the occasional inspiring quote or funny meme, most of what is on our social media feeds wouldn’t qualify as inspiring or positive. Instead, fill your mind with positive thoughts that help direct your attitude for the day! Wake your kids with a smile. If you are rushed and stressed when you wake them up, that’s how they will start the day too! The first words you hear really set the tone for the morning. Eat a good breakfast. Eating a good breakfast not only helps your kids perform better in school, it helps you perform better throughout the day. I’m not talking about sugary cereal. I’m talking about real food with real nutrients to power you up for what life has in store for you on any given day.
In honor of #betterbreakfastmonth, I’ve selected some of my favorite better breakfasts that will help you get out the door quickly.
My overnight Apple Cinnamon Oatmeal makes mornings easier because you actually make it the night before. Set a timer on your crockpot and you’ll wake up to the warm goodness.


- DRY
- 4 cups gluten free oats
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp sea salt
- WET
- 1 can full fat coconut milk
- 1 cup water
- 2/3 cup maple syrup
- 2 tbsp chia seeds plus 6 tbsp hot water, mixed (egg replacer)
- 2 tsp. vanilla
- ALSO
- 2 apples cored, peeled and chopped
- coconut oil
- Coat bottom and sides of crockpot with coconut oil and turn on low during prep time
- Mix all dry ingredients together
- Make up the chia egg
- Mix together all wet ingredients in separate bowl and add chia egg to it and chopped apple.
- Pour wet ingredients bowl into dry bowl and mix well
- Pour ingredients in crockpot
- Set time for 6-7 hours before you want to eat. Put crockpot on low for 6-7 hours.
Just toss in a scoop of your fave protein powder. Add 8 oz. of almond milk, 1/2 teaspoon of instant coffee, 4-6 ice cubes and blend. That’s it. You get your coffee fix, without any guilt.
Want pancakes? Add bananas. Try these.
And one of my favorites is Avocado Toast.
Mash some avocado with just a squeeze of lemon. Spread it on a piece of Ezekial bread. Sprinkle a little garlic powder, black pepper and flax seed on it then top it with a scrambled, over-easy or poached egg.
Breakfast never looked sooooo good!
