You know that moment you look at the clock and think ‘Where did the day go?’ Well, it happened to me again. In fact, it’s been happening a lot lately. I don’t know why, but this time of year everything seems to speed up. Maybe it’s because the kids are busier at school or because my-to-do list gets longer the closer I get to the end of the year or because the stores are already decked out for Christmas and it’s not even Halloween! Deep breath. Release. I would love for time to slow down. It’s so easy to slack on the healthy eating when you are always on the go. Trust me, I know it can be tough to feed your family healthy when are trying to pack it all in. That’s why I want to share 3 Fall recipes every busy mom should have (along with a little advice on the side).
Don’t be afraid to ask for help: A slow cooker can be your best friend on crazy days. Start it in the morning and let it do all the work for you. This slow cooker chicken is a favorite for my kids. If you want a more adventurous taste, here’s a bonus recipe: Jessica’s Butternut Squash and Chickpea Coconut Curry.
Take comfort in knowing it won’t always be this way: In the meantime, try this healthy spin on a classic comfort food. Shepherd’s Pie.
Don’t forget to have some family time. It’s important to catch up when everyone is running in 10 different directions. My Happy Tummy Lasagna is perfect for reconnecting over. It’s easy to prepare, and it makes great leftovers!
When all else fails, drown out the world with a little chocolate. Don’t forget to take time for yourself. Try my recipe for Healthy Hot Cocoa and top it with my dairy free whipped topping. Now picture yourself sitting by a bonfire with nothing else to do but relax. (Caution: that image will only last as long as the hot cocoa or until your kids come running to get some!)
Don’t forget to let me know how you liked the recipes or how you added your own touch (isn’t that part of the fun of cooking?) I love to hear from you on Facebook. And for more great recipes follow me on Pinterest!
